Mushroom Burgers
Fancy a burger? Try these delicious mushroom burgers. This recipe is for four burgers and we actually wanted to freeze two, but they didn't make the freezer!

It's really simple and what better way to know better what's inside your burger than when you make it yourself! You could also make a bigger batch put them in the freezer. Or you could be like us and eat them in one sitting...

300 grams of mixed mushrooms (we used white mushrooms and portabella)

1 big onion

3 cloves of garlic

1 Tbsp thyme
-
1/2 tsp paprika powder
-
1 tsp chili powder
-
1 tsp salt

1 tsp black pepper
-
vegetable oil
-
1 bunch of fresh herbs to taste (we used celery)

1 tsp sunflower seeds
-
1 tsp pumpkin seeds

2 Tbsp cornstarch
-
4 Tbsp water
-
8 Tbsp breadcrumbs

Step by Step Instructions
Step 1
Preheat your oven to 180 degrees Celsius / 350 degrees Fahrenheit
Step 2
Let the garlic roast in the oven for 10 minutes. This will soften the taste.
Step 3
Finely chop the mushrooms and onion. Heat oil in a pan over medium heat. First bake the mushrooms for 5 minutes, then add the onion for 5 minutes and then add the garlic for a few minutes, which can be removed from the oven in the meantime.
Step 4
Add the herbs and seeds to the mixture (to taste) and then set aside separately in a bowl.
Step 5
Mix the cornstarch and the water, stir well to prevent lumps. Add the mixture and the breadcrumbs (except for 2 Tbsp) to the bowl containing the mushroom mix and divide it into 4 balls, then flatten these into burger patties.
Step 6
To get an extra crunchy exterior we put the burgers in breadcrumbs before they are baked. Then fry the burgers in oil on medium high heat for about 4 minutes on each side and then last but certainly not least: enjoy!
Tip: delicious with sweet potato fries next to it, or on a bun of your choice
